Le Tastevin Wine Club - Notes on Cheeses – November 19, 2025
The cheese have been selected because they in the past paired well with our Bordeaux blended wines. The cheeses were sourced from The Cheese Lady, and the epis and baguettes from Give a Thanks bakery, both in Rochester, Michigan.
Saint Angel (pasteurized cow's milk) is a luxurious French triple-cream brie-style cheese crafted by Fromagerie Guilloteau. It is known for its rich, buttery flavor and velvety texture. It has a soft, bloomy rind with a square, pillow-like shape, with a texture that is creamy and spreadable with a rich ivory paste. It's flavor profile is buttery and sweet, cream notes dominate, with a slight tang near the rind, then with mild mushroom-like earthiness that intensifies with age.
Barber's 1833 English Vintage Researve Cheddar is crafted using traditional starter cultures and the finest West Country cow's milk. Produced at Barber's dairy farm in the Somerset region, UK, this flagship cheese is carefully chosen for its optimal flavour profile. After maturing for 24 months, it acquires a creamy texture and a smooth finish. The cheese features naturally occurring crystals that provide a unique crunch. Its tangy sharpness is balanced by refined sweet notes, creating a distinctive and delightful taste.
