Le Tastevin Wine Club - Notes on Cheeses – September 16, 2015

Three cheeses were selected for the Super Tuscan wine tasting. There were two types of Parmigiano Reggiano, based on age. The younger cheese was aged 6-12 months, the other was a Vecchio version aged 2 years. The third cheese of the evening as a young Spanish Manchego, aged 6 months. Purchased from Costco, it is delicious due to its soft texture and youthful sweetness, which is quite different in a multi-year Manchego.
